Our Client, AH Goulburn Hotel Pty Ltd is seeking a highly motivated Restaurant Manager to join their team at Mercure Goulburn.


Tasks Include:

  • Ensure shift balances and shift transactions are accurately recorded in preparation for posting to Hotel accounts.

  • Demonstrate Sales Techniques in order to maximise Food and Beverage revenue through in-house promotion.

  • Request Hotel occupancy rates, in-house guest lists and conference bookings in order to prepare for unexpected business demands.

  • Check Food & Beverage specials of the day to optimise revenue.

  • Promote the Restaurant and Bar to the corporate market.

  • Create strategies to capture the local client information to assist in building local Restaurant and Bar trade.

  • Complete lead forms when potential contacts are identified and forward to the Sales Department.

  • Brief staff on specials, promotions, new lines, groups and function bookings to ensure they are aware of the activity within the Hotel.

  • Showcase the Hotel through on-site inspections and familiarisations and special events.

  • Work closely with the Hotel Manager to schedule repairs and maintenance, replacements and capital expenditure programs.

  • Interpret the needs of the market and assist in creating appropriate products.

  • Keep up to date with the latest Food and Beverage trends and equipment.

  • Assist, as required, with monthly stationary stocktakes to record and manage stock and ensure sufficient stock is available. Take steps to correct budget variances.

  • Assist, as required, with monthly beverage, glass and crockery stocktakes and ensure sufficient stock is available. Apply effectivetock rotation. Take steps to correct budget variances.

  • Ensure that all breakages and spillages are recorded.

  • Maintain accounting procedures and systems to ensure accurate guest account billing.

  • Maintain appropriate staffing levels during all Food and Beverage shifts to ensure the best service within the forecast wage cost.

  • Forecast expected demand and match Food and Beverage production and manning levels.
